GENERAL INFORMATION
- Szechuan Pepper is also known as Sichuan Sansho Pepper, ‘flower pepper’, which is derived from directly translating the Chinese characters or, from the older (botanical) term, it is known as ’prickly ash’. You can also find it referred to by the old name of ‘fagara’. Sichuan pepper (Chinese: 花椒; pinyin: huājiāo, also known as Sichuanese pepper, Szechuan pepper, Chinese prickly ash, Chinese pepper, Mountain pepper, and mala pepper, is a spice commonly used in Sichuan cuisine in China.
- The Zanthoxylum species is part of the Rutaceae family that contains all the citrus plants. This is also known as the rue family and contains flowering plants that generally have a strong scent. They can be found across much of Asia, North America, and, in fact, warm-temperate and subtropical areas around the world. China, and the Himalayan region in particular, is home to a diversity of Zanthoxylum species. The genus includes some 250 species.
- It generally doesn't require pruning as it will naturally form an attractive shape as it grows. However, pruning to restrict its size can be carried out.
SOIL REQUIREMENT
- Plant Szechuan peppers in nearly any type of well-drained soil. A handful of all-purpose fertilizer added to the soil at planting time will provided extra nutrition that gets the plant off to a good start.
